Food Safety Advice and Information for Businesses

E.coli (Escherichia coli) 0157

A harmful bacterium that is particularly dangerous because it has the ability to survive during refrigeration and freezing and has been shown to be tolerant of acid, salt and dry conditions. If consumed even at very low doses, it can lead to death or serious untreatable illness.

E.coli is a hazard that needs to be controlled through businesses food safety management systems. To help businesses comply with this requirement the Food Standards Agency has produced a guidance document which can be found on their website: Food Standards Agency

Food Allergen Labelling and Information (Regulation (EU) 1169/2011)

From 13th December 2014 businesses that provide non-prepacked foods (e.g. restaurants, takeaways, bakeries, delicatessens, food suppliers and caterers) will be required to provide allergen information to customers.

The Food Standards Agency has produced an advice leaflet on the above regulations, which gives guidance on how caterers can comply with the requirements. The advice leaflet is available here.
